BOREK ....cocina Turca


Últimamente en estos dos meses  de ausencia   he  optado por leer poesias  e historias  de la cultura Turca ..me ha  sorprendido mucho la sensibilidad y la forma de trasmitir emociones  , esa forma  tan diferente se comunicar , de vivir , de amar ….. esa forma  simple a veces de comer y de hacer de un plato algo tan diferente … el que elegí  es el BOREK ..una forma de pastel  con masa filo  que se hace diariamente en las casas relleno de diferentes maneras ...con carne  , con verduras o simplemente con mezcla de quesos .
El börek probablemente se originó en la cocina turca y otomana (cf. Baklava). "Börek" es una palabra turca para este plato en capas, y se aplica a una serie de variedades. Sólo en el idioma turco tiene la palabra 'börek' una amplia semántica. En los otros idiomas se ha tomado prestada la palabra y se ha convertido en algo más específico. 
En Turquía existen muchas variedades de börek. La más conocida de estas se denomina su böreği ("börek de agua") y es elaborado con queso blanco, lor o çökelek (dos tipos de queso blanco sin sal). El börek generalmente se consume acompañado de ayran o té turco.5​ 

En mi caso  lo hice  relleno de grelos  con queso  gouda y mozzarela  con nueces  y  de una manera muy simple de cocinarlo ….el resultado fantástico .
SE SUELE  ACOMPAÑAR DE YOGOURT O KEFIR …………………………...


INGREDIENTES .-
  • 2 yogoures  griegos 
  • 200 gr de grelos cocidos 
  • 100 gr de nueces
  •  200 gr de gouda rallado
  • 1 bolsa de mozzarella  rallada 
  •  mantequilla derreteida  o aceite de  oliva 
  •  6 hojas de pasta filo 
 PREPARACION .-
  • Primero cocemos los grslo ...los escurrimos  y cortamos en juliana ..reservamos 
  • cortamos las nueces  picadas a medias 
  •  preparamos los quesos y los mezclamos 
  • salpimentamos …..
  •  Preparamos las hojas de masa filo  y las cortamos a lo largo  de forma  que podamos envolverlas y formar un  rollo una vez rellena ….
  • Cada hoja la pintamos  con un poco de mantequilla derretida ..ponemos para cada rollo 2 hojas ...envolvemos y vamos poniendo en un recipiente de cristal para poder meterlo en el horno....como veis en la foto …..
 Una vez que están todos los rollos listos   espolvoreamos con  aceite de oliva   y sésamo tostado ...metemos en el horno a 180 grados unos 15 minutos con ventilador ……….


 Se acompaña con yogourt griego o kéfir ………. DELICIOSO
 UNA FORMA MUY SENCILLA DE COMER  Y CON EXCELENTES RESULTADOS ….MARIMI Ñ.
