PIZZA EN HORNO ELECTRICO ...COMO YO LAS HAGO

Siendo hija  y nieta de italianos  desde pequeña he aprendido a hacer muchas recetas  heredadas  ..pero también he aprendido  a hacer masas  de pasta fresca y sobre todo de la Pizza .... la se hacer con muchas variantes de harinas  y mezclas  pero esta que os pongo es muy sencilla no se tiene casi que amasar y además  el resultado es excelente ...crujiente  fácil de estirar y se hace muy rápido en el horno eléctrico ....en un tiempo de 15 minutos .


A nosotros nos gusta la pizza finita   que no sea un mazacote de masa ..que los ingredientes se saboreen  y además que sea agradable al comerla .... cuando se hace en horno de leña tradicional la masa tiene que ser un poco mas gruesa  al estirar porque  si no se quema  y queda como una suela de dura ..en cambio en los hornos de la cocina de casa  para mi gusto el mejor método es el que sigo ...nada de bandeja de horno ...nada de moldes ...nada de piedra .....en cambio una plancha  que puede ser de acero inox fina  como de 2 cm de espesor  o en mi caso es una bandeja de galletas de IKEA  que después de mucho pensar  comencé a utilizar  para hacer mis pizzas ...pan y empanadas ...
Como veis salen perfectas ....El truco está en precalentar el horno con la plancha dentro mínimo 15 minutos a 250 grados .... ...la plancha tiene que estar muy caliente ..aproximando se como en el horno de leña.......Mi horno SMEG  que es italiano tiene una función especifica de Pizza  las temperaturas están adaptadas  y solo tengo que precalentar en esa posición .......



INGREDIENTES PARA LA MASA .-

  • 5OO GR DE HARINA DE FUERZA  Y 1OO GR DE SÉMOLA  EN GRANO FINO 
  • ACEITE DE OLIVA VIRGEN 1 GRADO 
  • 25O ML DE AGUA TEMPLADA  Y 5O ML DE LECHE ENTERA 
  • 2O GR DE LEVADURA FRESCA DE PANADERÍA ...O 3 CUCHARADAS DE MASA MADRE ...
  • 1 CDITA DE SAL 
  • 1 CUDITA DE AZÚCAR 
Lo primero es deshacer la levadura en la leche templada  con la cdita de azúcar y 3 cucharadas de harina ...removemos con una cuchara ...tapamos y dejamos leve dar ....es lo que llamamos esponja .
cuando se utiliza la MM  ES LO MISMO ..solo se sustituye la levadura  por ella 
Si necesita más liquido  porque está muy solida ...le añadís agua  hasta que sea fácil de manejar ..
esperar a que se produzca  la subida de la masa esponja .


En un  bol grande echamos la harina de fuerza y la sémola fina  ...mezclamos y añadimos un buen chorro de aceite de oliva 1 grado ...esperamos a que la esponja esté lista .....la echamos  y comenzamos a remover todo con una cuchara  ...añadiendo agua en la medida que pida la masa .... seguir mezclando hasta conseguir que se acople todo ....añadimos la sal y solamente  mezclamos todo tapamos el bol y dejamos que leve de  el doble .... es el momento de abrir el bol  y doblar la masa como  con la masa hojaldrada ...solamente 2 veces ..le damos la vuelta y la dejamos reposar 30 minutos ...... la masa está lista , hacemos bolitas  del tamaño que queramos  


 Como veis tiene un color ligeramente  amarillo ...eso se lo da  la sémola  ...y UN TRUCO MIO  UTILIZO HARINA DE MAIZ BLANCO DE ESA DE LAS AREPAS  PARA ESPOLVOREAR LA PALA ANTES DE PONER LA MASA ENCIMA Y TAMBIEN PARA ESPOLVOREAR LA MESETA DONDE  ESTIRO LA MASA ...................ES GENIAL .

 
 EN MI CASO LAS HAGO DE MUCHOS GROSORES ...PERO PARA MI ESTE ES EL IDEAL COMO DE 1 CM DE ESPESOR .................................
TENEMOS LISTA LA MASA ...AHORA LA PALA DE MADERA O INOX ..LA ESPOLVOREAMOS GENEROSAMENTE DE HARINA DE MAÍZ BLANCO DE LAS AREPAS PORQUE LE FACILITA MUCHO QUE RESBALE UNA VEZ PREPARADA SIN NINGÚN PROBLEMA A LA PLANCHA DEL HORNO  PRECALENTADA ..........................
CUANDO TENEMOS LA PIZZA PREPARADA CON LOS CONDIMENTOS QUE QUEREMOS ....ENCIMA DE LA PALA LA PREPARO ..3 CUCHARADAS DE PULPA DE TOMATE TRITURADA ...CHAMPIÑONES FILETEADOS... DOS PUÑADOS DE QUESO MOZARELLA RAYADO   JAMON DE YORK CORTADO EN TIRAS ...NUEVAMENTE QUESO MOZARELLA RAYADO Y 1 QUESO MOZARELLA ENTERO FRESCO CORTADO EN TROZOS  ....ORÉGANO... ALBAHACA ...ALCAPARRAS ...Y UN CHORRO GENEROSO DE ACEITE DE OLIVA 1 GRADO POR ENCIMA ...........ESTÁ LISTA PARA METER AL HORNO 


ES MUY FÁCIL SIMPLEMENTE  CON UN GOLPE SECO  DEJÁIS DESLIZAR LA PIZZA ENCIMA DE LA PLANCHA MUY CALIENTE .... CERRÁIS EL HORNO Y PROGRAMÁIS  200 GRADOS UNOS 15 17 MINUTOS .....COMPROBAR QUE NO SE QUEME .....
PASADO ESTE TIEMPO CON UNA PALA  ESTRECHA Y LARGA  Y CON GUANTES AISLANTES DE HORNO LE DAIS UN GIRO DENTRO ...CUANDO VEÁIS QUE SE SUELTA  FACILMENTE DE LA BANDEJA ...ES QUE ESTÁ ECHA .........


 DESPUÉS DE MUCHO EXPERIMENTAR  HE CONSEGUIDO HACERLAS REALMENTE BUENAS ..... COMO VEIS EN LA FOTO SON MUY FINAS  Y EL QUESO ESTÁ EN SU PUNTO .......SI TENÉIS ALGUNA DUDA PREGUNTARME .... Y HACERLAS OS VA A GUSTAR MUCHO ..................................MARIMI

  2. Mar es que pensando pensando di con el truco .... lo importante es la base en que la pongas que tiene que producir calor suficiente para que suba y se haga la masa rapidamente ... ´´´´es asi como funciona el horno de leña .besos
